I was in your same spot and bought the 2021 CX-5 Signature. I exclusively use apple carplay so I didn't care too much about the infotainment. I was happy to get the wireless carplay which works flawlessly (and has been removed in 2021.5). Also keep in mind the 2021.5 (and forward) do not have touch screen which is a big negative for me.

Install CarPlay, throw the chip away, and be happy with CarPlay. Buy a real Nav Chip from your dealer. Buy another Nav Chip from Amazon, it may work for a year or two.
